Easy Recipes Your Kids and Parent Will Love

My mother lived with me for 13 years during her battle with Alzheimer's disease. Although my children were grown, my adult daughter and her kids lived with us. I routinely had to prepare snacks and meals for my grandchildren that I could also give to my mom. Because Mom struggled with her memory, she had no dietary restrictions, but I still had to make sure she could enjoy the food I made for my grandkids. Here are a few easy dishes I made often that pleased everyone:

English Muffin Pizzas
Split English muffins in half and toast lightly
Top with pizza sauce, shredded cheese, and other favorite pizza toppings like pepperoni, sausage, or mushrooms.
Place on a sheet tray and bake in a 375 degree oven until the cheese is melted and the muffins are fully toasted.
Serve to kids with a side of sliced fruit or carrots sticks and ranch
Serve to adults with a side salad, roasted cauliflower, or coleslaw

Breakfast Burrito
Saute in a pan on medium-low heat with a tablespoon of butter any favorite omelet toppings like fresh spinach, onions, mushrooms, chopped green/red peppers, or crumbled sausage. Once softened, add eggs (one per person) and scramble.
Sprinkle with shredded cheese, then place eggs/toppings in tortilla rolls and top with salsa, sour cream, and sliced avocado.
Serve to kids with a yogurt stick or sliced bananas
Serve to adults with microwave oatmeal or grits

Easy muffin tin dessert
Place round butter crackers (Ritz works well) in the bottom of muffin tins. Top with a dot of butter (1/8-1/4 teaspoon) and sprinkle to cover each with brown sugar. Bake in 350 degree oven for about 10 minutes or until the brown sugar and butter are melted well and bubbling.
Remove from the oven and top each muffin tin treat with chocolate or butterscotch chips. The residual heat will melt the chocolate.
For kids, top with sprinkles.
Once completely cool, remove from muffin pan.
